italian ricotta cheese cake-help!?
I just made mine with the following ingredients:
2 lb ricotta
6 eggs
2 1/2 C confectioners sugar
3/4 tsp cinnamon
1 TBSP orange zest
I cooked it at 300 for about 90 min,.I just took it out and it seems to taste VERY EGGY...and seemed a little spongey??
The texture almost seems like scrambled eggs??
I cooled it and put it in the refrigerator on a rack to drain excess water...now I know warm cheesecake isnt exactly good...but now I'm very concerned...this cheesecake is very important to me...can someone please tell me what went wrong with this recipe?The oly thing I did was start the temo at 350 for like 20 min then changed it to 300..please help!
Using only ricotta cheese is going to give you the texture you got, curdled like. It sounds right - 3 eggs per pound of cheese, but it does seem like a lot of sugar - which would give it a softer texture.
Next time, substitute some of the ricotta with cream cheese and add 1/2 cup of heavy cream
